Real food has a shelf life.
That is the point.

Pick up a packaged sweet from a supermarket shelf. Check the expiry date. If it says six months from now, put it back. Not because it has expired — because of what had to be done to it to make six months possible.

Food rots. That is biology. Organic matter — palm jaggery drawn from a living tree, pure ghee clarified from whole milk, cashews ground from raw nuts — begins to change the moment it is made. Karupatti — Palm Jaggery

Shelf life: 4–6 weeks raw; 3–5 days in halwa

Karupatti retains trace enzymes and minerals from the palmyra sap. These make it biologically active. Iron, potassium, polyphenols — all volatile compounds that begin degrading on contact with air and moisture. The same biological activity that makes it nutritionally superior to white sugar makes it naturally perishable. You cannot have both.

Pure Cow Ghee

Shelf life: 3 months raw; 3–5 days in sweets

Unadulterated clarified butter carries short-chain fatty acids (butyric acid), fat-soluble vitamins A, D, E and K2, and conjugated linoleic acid — a natural anti-inflammatory. These fats oxidise slowly but definitely. Shelf-stable factory ghee is hydrogenated or processed at high temperature, destroying every compound that made it worth using.

Shelf life: 3 weeks raw; 5–7 days in sweets

A premium raw cashew contains oleic acid, zinc, magnesium and antioxidant polyphenols. In a proper kaju sweet made with real cashew paste, the fat in the nut begins to oxidise — because it is real fat, not processed. That's the 5-7 day window. After that, it's rancid. Before that, it's extraordinary.

Shelf life: Aged 6–12 months before use; finished sweet 7 days

The ageing is deliberate — it deepens the starch structure and improves the frying behaviour. But once fried in real oil with karupatti, the product has a 7-day window. The residual moisture and the living nature of the oil-starch matrix begin to change. That change is proof the rice and oil were genuine.

We make roughly 400 kg of halwa on a busy day. By Thursday of the same week, every gram of it will either be eaten or composted. Not discarded as waste — composted as organic matter returning to the soil it came from.
